What's for Breakfast?

 

What do you eat for BREAKFAST???   I get asked this question all the time!   I think this is the meal that stumps people the most.  When you first give up sugar/gains and try to follow primal/paleo or low carb lifestyle, a breakfast consisting of meat doesn't really sound appealing or healthy.  Eggs everyday can also lose some of its appeal after a few weeks!  So what do you eat?  When I first started low carb, I must admit that eggs and avocados were my daily staple.  I love them!  However in the last year, paleo/primal pages have been popping up all over the internet with AWESOME recipes and ideas.  I have never been a stellar baker or chef, so it was a little intimidating at first to try cooking with different flours.  However, once I got started it was much easier then I had anticipated.  However, for your information, you should know that many of the recipes that I have come up with do not have exact measurements as I am a chef "by eye" type of cook LOL.  When you see a reference to another webpage, that will be a specific recipe that you should follow exactly!  Here are a few to get you started! I will be added more as I find them!
 
My grocery staples for breakfast (and other meals):
 
Eggs, Eggs and More Eggs (FARM eggs are strongly encouraged)
Coconut Flour
Coconut Oil (harder like lard when cold, becomes liquid when warm)
Coconut Milk (in can)
Almond Flour
Baking Soda
NUTS (every kind you can think of)
Banana chips dried
Dried Fruits (cranberries, dates etc)
Bananas
Berries
Avocados
Almond or Sunflower butter
*Natural Peanut Butter
*High Fat Dairy Products (heavy cream, whole milk, butter, cheese etc.  Goat or organic is best)
 
*starred items: Typically following a strict Paleo program, legumes and dairy products are not in list of "allowed foods".  They are "allowed" in most Low Carb programs.  I have found that trial and error is the best way to determine if you want to include these in your food intake.  I personally can not tolerate any sugars, even if they are all natural like honey or maple syrup.  I have to use stevia for a sweetener. Some of the recipes I will be including in this page will call for honey or maple syrup.  I typically omit them and substitue with stevia if a sweetener is absolutely necessary.   I personally am able to tolerate high fat dairy and legumes very well, so I use them in moderation a few times a week.  It is really all about listening to YOUR OWN BODY.  In my humble opinion, these programs should be used as a TEMPLATE or GUIDELINES, not a written in stone laws never to be broken.  Use trial and error and see what works best for YOU! 
 
 
Breakfast Ideas

Never Fail Eggs and Steak:
 
Eggs (any way you want to cook them)
Steak (any way you want to cook it)
*cheese (if you are including hf dairy)
Any veggies sauteed in a high quality olive oil
 
 
Eggs and Avocados
 
Eggs (any way you want to cook them)
Avocado (serve cold along side eggs, or sautee if you want)
*cheese (if you are including hf dairy)
Any veggies sauteed in a high quality olive oil

 
 
Paleo granola
 
*very relaxed recipe, just throw stuff together and experiment!
 
1/2 c to a 1 cup EACh of basically all or any kind of nut you have handy (except for relatives :))
     -almonds, pecans, walnuts, sunflower seeds etc.
1/2 to 1 c unsweetened coconut flakes
1/2 to 1 c. dried fruit of your choice (cranberries, blueberries, dried bananna chips etc)
 
 
You can chop these all in your food processer or my favorite method of putting in ziplock bag and taking a hammer to them!
 
Place all your ingredients on a cookie sheet, preferably lined with parchment paper
 
Drizzle honey, maple syrup, agave lightly over mixture.  Use your best judgement here!
 
Bake at for about 15 to 20 minutes at 300.  Turn as necessary.
 
Let cool.  Pour into airtight container or ziploc bag and put in fridge.  Can be served right out of bag or serve as cereal with almond, coconut milk or high fat cream or milk depending on YOUR food plan.
 
Granola Energy Bars
 
Take about 1/2 of what you made in above recipe and set aside
 
1/2 c. coconut oil
1/2 c. nut butter (almond, seseme or peanut*)
2 to 3 tbsp unsweetened baking coco
honey or stevia (amount dependent on how sweet you want to make)
 
Melt oil and nut butter in microwave until liquid
add in coco powder and sweetener of your choice
Mix
Mix in granola mixture
 
*should be very thick consistency
 
Pour into baking pan (a few inches deep) and press until firm and even
Place in fridge for about an hour or freezer for 20 minutes
 
Cut into bars and store in ziploc bags to grab and go! Keep in the fridge or cold as the coconut oil becomes liquid consistency in warm temps. These are super yummy, so recommend hiding them if you want them for yourself!

Paleo Granola 2 *similar recipe and directions to above*

1 cup raw almonds
1 cup raw cashews
... 1/4 cup raw pepitas/pumpkin seeds
1/4 cup raw sunflower seeds (no shell)
1/2 cup unsweetened coconut flakes
1/4 cup coconut oil
1/2 cup raw honey
1 tsp. vanilla extract
1 tsp. sea salt
1 cup raisins (or your favorite dried fruit)

Paleo Pancakes

3 eggs
1 tbsp coconut flour
1 tbsp almond flour
1/2 tsp cinnomon
1/2 tsp vanilla extract
1 tsp baking soda

Mix and cook like pancakes! Serve with warm berries or warm apples with cinamon

*serve with homemade heavy cream whipped cream if using dairy



Sweet Potato Pancakes

1 medium sweet potato
3 eggs
1 tsp. oregano
... 1/2 tsp. onion powder
salt to taste
1 tbsp. coconut oil
(alternative: Want to make it even easier? Use Herbamare instead of other spices and herbs)

Shred sweet potato in food processor. In a large bowl mix with eggs and other ingredients. Warm coconut oil in large skillet and form sweet potato mix into 5" pancakes.

Cook until browned on both sides.
 
 

Paleo Sweet Potato Breakfast Cake

... 1/2 cup mashed, cooked sweet potato
1 tsp of pumpkin spice
1 tbs pure maple syrup
1 tsp vanilla extract

Blueberry/Banana smootie

1/2 c. froze blueberries
1 frozen banana
1 can coconut milk

Blend and drink! Yum! Be cautious when first introducing coconut products to your diet as they have a lot of fiber! Can make things move along quickly in your plumbing!

1 Ripe frozen bananna
Frozen fruit of your choice

Push through machine and you have sugar free, dairy free icecream!
